“Nyati M-smart” which translates to Smart Buffalo is one of the signature cocktails in the Big Five Restaurant located at Ole Sereni Hotel, Nairobi. The Buffalo is among the Big Five animals cherished in Kenya and this cocktail is listed among the big five cocktails. It is a celebration of global flavours and the strong-natured Bulleit Bourbon. Nyati M-smart Cocktail complements rye and oak flavours with a delicate balance of passion juice and grenadine syrup poured over lots of ice. Just like the buffalo, it is considered as one of the gentle giants.
INGREDIENTS:
Bulleit Bourbon (Dry Whiskey.)
Passion Fruit Juice.
Lots of Ice Cubes.

Lemon Fruit (Zest- is a piece of the peel of a citrus fruit used as flavouring) or Passion Fruit –To garnish.
Angostura Bitters.
Grenadine Syrup.
METHODOLOGY:
This amazing cocktail is made using the Build up method. You start by filling a glass with ice cubes.
Stir the ice cubes to defrost them.
Sieve to pour the excess water that has formed in the glass.
Pour (60ml) of the Passion Fruit juice into the glass with the ice cubes.
Carefully add (50ml) of the Bulleit Bourbon into the same glass.
Stir the mixture to balance.
Pour (5ml) of the Grenadine Syrup into the mix then add (3ml) of the Angostura Bitters.
Garnish using the Zest from the Lemon Fruit or Passion Fruit.
