Rhubarb is an interesting and herbaceous perennial vegetable known for its thick and edible stalks. Known in Swahili as 'Rhubabi', it is mostly used in cooking and baking. In this case, it is skillfully used to make yourself a pink delight.
Ingredients:
1kg pink rhubarb stalks.
400g caster sugar (Avoid golden sugar)

Methodology:
STEP 1
Start with carefully washing the rhubarb and trimming the stalks to perfection. Ensure there are no leaves or anything unnecessary left. Once the stalks are good and ready, cut them into 3cm lengths.
Pour some caster sugar into a jar and put the stalks in it. Carefully shake the contents of the jar put a lid on and leave it overnight. The function of the caster sugar is to drain the juice out of the rhubarb stalks.
STEP 2
With a whole night of preparation (24 hours), add the gin, put the lid back on and shake the contents of the jar. Then leave it for 4 more weeks before drinking it. Strain the liquor through the sieve and pour it into a bottle.
You can also leave the rhubarb and liquor in the jar and serve it in drinks in the same manner. The longer the time it takes to prepare, the paler the colour becomes. It does not look as dramatic as it was before but it is stronger. With rhubarb gin, it is always happy hour.
