Someone many years ago thought, “chicken, chips, arrow roots and boiled maize are singularly mouth-watering delicacies. But what would happen if we mixed them all together?”

The end result of mixing all these foods is locally known as ‘kuku bahati’. Those who have ever tasted a platter live to tell tales of ‘mashakura’ they ate and left no crumbs.

The name kuku bahati is because the main ingredient is chicken, that is added other food stuffs like chips, arrow roots, plantain, boiled maize and many more.

The number of ingredients to have in this meal are limited by your imagination, but be careful not to overload your plate. To make tantalizing kuku bahati at home, use this tasty recipe. Ingredients: Full chicken (depends on the number of servings) Arrow roots Potatoes cut into chips Maize 3 eggs Tomatoes (blended) Ginger and garlic paste Coriander 3 Onions Cucumber Soy sauce Green bell pepper Lemon Salt Cooking oil Instructions: Boil the chicken with ginger and garlic. Parboil the potatoes for five minutes in garlic. Boil the arrow roots and eggs separately. After the potatoes are boiled, deep fry them in hot oil. Once the chicken is soft, drain the broth and set aside. In a different cooking pot, sauté the onions until they are soft, don’t let them turn golden brown. Add three tablespoons of soy sauce, a little garlic and ginger paste, green bell pepper and coriander stems. Stir until the components are soft. Add the blended tomatoes and salt then stir to mix. After the components are well mixed, add in the chicken and stir. Cover for a few seconds to allow the flavour to slip into the chicken. Add in the chips, arrow roots, eggs, and boiled maize. Squeeze the lemon onto the mixture and then stir. Add in half a cup of water and cover to allow the food to cook and flavours to be well integrated. Enjoy!
