A handful of fresh mint, chopped
1/2 cup water
Salt and pepper to taste
Method:
Place the beef chunks in a bowl. Pour the white vinegar over the beef and let it marinate for approximately 30 minutes to tenderise.
Heat 1 tablespoon of oil in a pan over medium heat. Sauté the sliced onions until they are golden brown. Remove the onions from the pan and set them aside.
Add the marinated beef and the garlic paste to the pan. Cook the beef until it is golden brown on both sides. Pour in the 1/2 cup of water and bring it to a boil.
Season with salt and pepper. Continue to cook until the liquid has reduced. Add the finely diced green pepper and mix well. Stir in the sautéed onions.
Add the chopped mint and cook until the dish reaches a wet fry consistency. Serve hot with ugali and your favourite seasonal vegetables. Enjoy!
