Pasta has always been a go-to meal for most families be it for lunch or supper.

Meaty veggie pasta requires ingredients that are readily available in our homes and is so easy to prepare thus making it a favourite for many people.

Ingredients:

500 g minced beef.

300 g pasta.

1 red onion.

1 bell pepper.

2 carrots.

2 sticks of celery.

2 tomatoes.

2 garlic cloves

1 cup of peas.

Salt to taste.

Black pepper.

Turmeric.

Paprika.

Mixed herbs(optional)

Instructions:

Add your minced meat to a saucepan and fry for about five minutes. In a pot add your pasta into boiling water with cooking oil and salt to taste.

Finely chop your onion, add it to your meat and stir well. Fry for about a minute and proceed by adding your diced carrots and bell pepper. Continue stirring so as to prevent the meat from sticking to the pan.

Add in your chopped celery sticks and mix well. Do not forget to check on your pasta and when properly cooked drain the water leaving some aside for the meat.

Blend your tomatoes and add the puree to the beef and continue stirring ensuring the ingredients are well coated. Add your spices and salt to taste, finely chop your garlic cloves and add it to the pan then fry for 2 minutes.

To the mixture add in the frozen peas and the pasta water set aside. Cover the pan and let the beef boil for a while before adding the cooked pasta. After adding the pasta let it simmer and absorb the flavours before serving it.

Serve the meaty veggie pasta in bowls, garnish with parsley and enjoy!
