Easy recipe: Kenyan poussin chicken with chips

Let's make this delicious Kenyan poussin chicken with chips.

What you will need:

1kg chicken thighs (skin on)
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon of crushed black pepper
Salt to taste
1/4 cup white vinegar
Vegetable oil for frying

Method:

Marinate the chicken with garlic, ginger, black pepper salt, and white vinegar. Leave to marinate for about an hour then fry the chicken until golden brown and crispy on the outside. Once the chicken is fried set aside. Keep the rest of the marinade for the sauce.

For the sauce:

200g margarine
1/2 teaspoon minced garlic
30g Spanish paprika powder
The chicken marinade
One lemon or lime (squeezed)

Melt the margarine in a frying pan over medium heat, add the garlic and reduce the heat to low. Add the paprika and mix well, then add the remaining chicken marinade. Add the lime juice.

Bring to a simmer, once the liquid has evaporated add the fried chicken. Continue to pour the sauce over the chicken, then remove the chicken from the sauce and arrange it on a platter.

Take your already cooked chips or crisps and add them to the sauce. Coat them with the beautiful flavours from the sauce and serve with the chicken. Keep the rest of the sauce for future use, you can refrigerate it for up to a week or so. Enjoy!
