Easy recipe: Pan-roasted tamarind chicken

1 tablespoon chopped rosemary
Salt to taste
1 tablespoon of oil
1 chicken bouillon cube
1 teaspoon turmeric powder
1 teaspoon curry powder
1 teaspoon black pepper
50ml tamarind sauce or extract
Juice of one lime
Chopped coriander
What to do:
In a nonstick pan over blazing heat, pour in the oil pan and sear the chicken for about three minutes on each side or until golden brown.
Crumble in the chicken cubes, add the turmeric powder, curry powder and black pepper. Turn the chicken so that the spices are incorporated on each side of the chicken.
Then add in the tamarind sauce and cook for another five minutes once the spices are incorporated reduce the heat to low. Turn the chicken again so that the sauce is all over the chicken then cover and let it cook again for another ten minutes on low heat.
Add the juice of one lime, sprinkle some freshly chopped coriander and you are ready to serve with your favourite side dish such as ugali, roast potatoes or even salad.
