Many people do not like eating pumpkin on its own in spite of its nutritive value. However, if you try this recipe, you and your family will enjoy it without even recognising it is pumpkin and even ask for more.

What you need

• A small pumpkin or butternut

• A kilogramme of wheat flour

• An egg

• Four tablespoons of vegetable oil for the dough and more for frying

• Salt

How to prepare

1 Wash and cut the pumpkin into cubes before boiling for 15-20 minutes.

2 When ready, remove and keep aside to cool.

3 Peel the skin, add salt and mash.

4 Add the egg, flour and knead.

5 Add oil to soften the dough and continue kneading.

6 Using a rolling pin, spread out the dough and smear oil on it. Cut into thin strips.

7 Roll strips into balls then cover with kitchen towel for 10 minutes.

8 Take the balls, one at a time and roll out on a floured board to form half a centimetre thick rounded chapatti shapes.

9 Fry on a hot pan with oil to golden brown. Turn it and do the same to the other side.

Vegetable stew

What you need

• Half of small cabbage — washed and shredded

• Three to four carrots — peeled and sliced

• Four potatoes — peeled and washed

• Two courgettes — washed and sliced

• One cup of boiled peas or fresh beans

• One onion — washed and chopped

• Two ripe tomatoes — washed and chopped

• Salt

• A quarter teaspoon of turmeric

• A quarter teaspoon of pepper (optional)

• A tablespoon of vegetable oil

How to prepare

1 Add oil in a pan and sautÈ the onions.

2 Stir in tomatoes and salt and cook for three minutes.

3 Add all the vegetables except the cabbage. Stir and let it cook for seven minutes.

4 Now add the cabbage, stir and cook in low fire for another five minutes.

5 Remove from the fire and serve with the chapati.

Tips

Apart from pumpkin, you can use potatoes, green bananas or arrowroots to make chapati. You can also prepare mandazi in the same way but you need to add sugar and baking powder. This method will help you economise on the flour.
