
When that chill bites and you're craving something warm and comforting, nothing hits the spot quite like a good, old-fashioned chicken noodle soup.

1 large onion, chopped
2 carrots, peeled and sliced
2 celery stalks, sliced

3 cloves garlic, minced
8 cups chicken broth (or stock)
2 cooked chicken breasts, shredded
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon black pepper
1 bay leaf
2 packets of noodles
Fresh parsley, chopped (for garnish)
Salt to taste
Instructions:
Heat your oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook until the onion is softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Pour in the chicken broth. Add the shredded chicken, thyme, rosemary, black pepper, and bay leaf. Bring to a simmer, then reduce the heat and let it simmer for at least 15 minutes, or even longer if you have the time. This helps the flavours meld beautifully.
Add your noodles to the simmering broth and cook according to the package directions, usually about 8-10 minutes, or until tender.
Remove the bay leaf. Taste the soup and season with salt as needed. Ladle the soup into bowls and garnish with fresh chopped parsley.
