Let’s make this delicious Iftar recipe that is perfect for Suhoor as well. Ramadan Mubarak!

What you will need:

1kg mutton chunks

4-5 tablespoons vegetable oil

1 diced onion

1 tablespoon whole cumin

1 tablespoon minced ginger

1 tablespoon minced garlic

1 teaspoon black pepper powder

1 teaspoon meat spice mix

3 beef bouillon cubes

1 grated capsicum

500ml butter milk or lala

1/4 cup white vinegar

Handful fresh coriander, chopped

What to do:

In a pressure cooker, add the vegetable oil, sauté the onions, cumin, garlic and minced ginger until golden, add the black pepper and meat spices, mix well and crumble in the beef bouillon cubes (you don’t need salt if you use 3 bouillon cubes).

Next, add the mutton, mix well, then add the grated capsicum, continue to sauté, then add the buttermilk or Maziwa lala, cover and pressure cook for 25 minutes, remove the lid and cook slowly until the liquid has reduced, add the chopped coriander, mix well and serve with your favourite rice.

To make the capsicum rice, simply mix 1 capsicum with the water ratio for your rice, then add some whole cumin to the mix and there you have capsicum rice that is full of flavour.
