What you will need:
2 tablespoon vegetable oil
1 onion, sliced
1 teaspoon garlic, minced
1 tomato, diced

1/2 teaspoon black pepper, crushed
1 tablespoon paprika
1 teaspoon turmeric powder
1 tablespoon Safa tomato paste
Salt to taste
1/4 cup water
7 whole eggs
150g mozzarella cheese
1/2 teaspoon oregano
What to do:
In a pan over medium heat, add in the oil, saute the onions until soft, add in garlic mince, tomatoes, black pepper, turmeric and mix well, then add in the tomato paste.
Cook until everything is combined. Add salt to taste and 1/4 cup water; bring to a boil, then add in the eggs one by one.
Add in the mozzarella cheese, then cover and cook for another 5 minutes on low heat. Finish off with oregano.
Serve with your favourite toast.
